Mediterranean-style raw zucchini salad

A light and refreshing salad that brings the best Mediterranean flavors to your plate — thin strips of raw zucchini combined with sun-dried tomatoes, olives, toasted pistachios, and a drizzle of chili-infused olive oil. Fresh, crunchy, and packed with umami flavor, it’s the perfect choice for any meal.

Ingredients
  • 2 medium zucchinis
  • 7–8 sun-dried tomatoes
  • 30 g toasted pistachios
  • 1 red onion
  • 3 cloves of garlic
  • 10–12 green olives
  • 1 tbsp chopped dill
  • 2 tbsp olive oil
  • 1 tbsp chili-infused olive oil
  • Zest of 1 organic lemon
  • Juice of ½ lemon
  • Salt and pepper

Cooking instructions. Step by step

  1. Spălați bine dovleceii și tăiați-i în fâșii cât mai subțiri
  2. Într-o tigaie, încălziți uleiul de măsline și gătiți ceapa roșie tocată mărunt împreună cu usturoiul, roșiile uscate și măslinele tăiate. Sotați-le la foc mic până devin moi.
  3. Transferați legumele din tigaie peste fâșiile de dovlecel crud.
  4. Adăugați fisticul copt (tocat grosier), mărarul tocat, coaja rasă de lămâie și zeama de lămâie. Asezonați cu sare și piper după gust, iar dacă doriți un plus de iuțeală, adăugați și uleiul cu peperoncino.
  5. Amestecați ușor toate ingredientele astfel încât dovlecelul să fie acoperit uniform de sos și arome, apoi lăsați salata să se odihnească 5–10 minute înainte de servire pentru ca gusturile să se combine armonios.
