Zucchini Paste (high-protein)

As the summer heat sets in, the last thing anyone wants is to spend hours in the kitchen. This zucchini paste is the perfect quick, nourishing, and delicious dish to enjoy during the warm months. Made with fresh zucchini, white beans, tahini, lemon, garlic, and Herbes de Provence, it’s a flavorful and refreshing meal that can be prepared in no time. Drizzled with a touch of spicy oil and garnished with fresh parsley, this dish is sure to become a summer favorite.

  • For the zucchini paste:

    • 2 zucchinis
    • 2 cloves of garlic
    • Salt and pepper to taste
    • 250 g cooked white beans
    • 1 tablespoon tahini
    • Zest of one lemon
    • Juice of half a lemon
    • 1/2 teaspoon herbs de Provence

    Garnish:

    • Spicy oil (we replaced it with a mix of extra virgin olive oil and cayenne pepper)
    • Fresh parsley

    • Arrange the zucchini paste on a deep plate or bowl. Drizzle some spicy oil on top. (In this recipe, we didn’t have spicy oil on hand, so we improvised by combining olive oil with cayenne pepper.)
    • Finish off with some fresh parsley for a touch of taste and color.
  • Cooking instructions. Step by step
    • Cut the zucchini into thin slices.
    • Sauté the zucchini slices for 5-10 minutes until they turn golden-brown.
    • Season them with salt and pepper to taste.
    • When they are done, add in the minced garlic and mix for 30 more seconds. This will prevent the garlic from burning while infusing its flavor.
    • Next, transfer the cooked zucchini into a food processor.
    • Add in cooked white beans, tahini for creaminess, lemon zest, lemon juice, and Herbes de Provence.
    • Mix until everything is well combined, creating a creamy, flavorful, and nourishing paste.
