INGREDIENTS

  • 4 tortilla wraps or flat bread
  • 1 large Italian eggplant
  • 4 roasted peppers
  • 2 scallions or green onions
  • 150 g hummus
  • 400 g salted firm tofu
  • 1 tsp paprika
  • 1 Tbsp nutritional yeast
  • 4 Tbsp plant-based milk
  • 1 English cucumber
  • 150 g plant-based, unsweetened yogurt
  • 4 Tbsp olive oil
  • 1 clove of garlic
  • 5 mint leaves
  • Salt & Pepper to taste

INSTRUCTIONS

To prepare the eggplants:

  1. Slice the eggplants into rings
  2. Sprinkle olive oil in a griddle pan (or any non-stick pan) and grill the eggplants until cooked on both sides, on high heat

To prepare the scrambled tofu:

  1. Add 3 Tbsp of olive oil in a non-stick pan, then add the chopped scallions and cook them until soft
  2. Place the tofu in a clean paper towel and squeeze gently to remove excess liquid
  3. Use your hands to crumble the tofu into small pieces and add it over the scallions
  4. Add the paprika and the nutritional yeast
  5. Mix them all together and let it cook for 5 minutes
  6. Add the plant-based milk for a smoother texture

 

To prepare the Vegan Tzatziki Sauce:

  1. Grate the cucumber, then squeeze the excess water
  2. Add the pressed garlic, the vegan yogurt and chopped mint
  3. Add a pinch of salt and mix it well
  4. Transfer it in a separate bowl, add a Tbsp of olive oil on top and sprinkle some mint for a perfect look

Time to put it all together:

  1. Slice the grilled eggplants and the roasted peppers into strips
  2. Take a tortilla wrap and spread a layer of hummus
  3. On top, add the scrambled tofu
  4. Continue with the roasted peppers and eggplants
  5. Roll up tightly and then fry the wraps on all sides at medium-high heat in a non-stick or grill pan
  6. To serve, cut each wrap on the diagonal into 2 pieces and place the vegan tzatziki sauce on the side

💡 Tips: How to roll-up your wrap perfectly: Place the wrap filling in the center of the tortilla. Use both hands to simultaneously fold both sides of the wrap to cover the center of the filling. Then fold the bottom towards the center and continue folding until you reach the other end. Press the wrap and make sure it is stuffed tightly.
