Total time: 25 minutes

Course: appetizer

Cuisine: Vegan, Mexican

Servings: 6

🌱6 tortilla shells

🌱1 red bell pepper

🌱1 zucchini

🌱200 g smoked tofu

🌱150 ml vegan milk

🌱150 g vegan cheese

🌱Fresh coriander

🌱Salt & pepper to taste

🌱Oil for cooking

How to prepare them:

  1. Preheat the oven at 180 degrees Celsius
  2. Drape the small tortillas over the oven rack and bake them for about 10 minutes until golden-brown
  3. When they are done, take out the oven rack and let them cool down and get nice and crunchy
  4. Then, cook the veggies (bell pepper and cubbed zucchini) in some olive oil
  5. Cut the smoked tofu into cubes and cook it until golden brown
  6. Next step – prepare the vegan cheese sauce: in a pot, mix the vegan milk and the vegan cheese until you get a creamy texture and finish by seasoning it with a little bit of pepper
  7. To assemble the tacos, put a layer of shredded lettuce on the bottom of the tortilla shell, continue with the cooked veggies, then the smoked tofu
  8. Add some corn, avocado, vegan cheese sauce and finish with a few fresh coriander leaves.
