Vegan Tacos

No taco shells, no problem! Here’s how we prepared some delicious vegan tacos with a few tortilla shells in the oven. Working in the kitchen challenges you to get creative.

  • Ingredients
    • 6 tortilla shells
    • 1 red bell pepper
    • 1 zucchini
    • 200 g smoked tofu
    • 150 ml vegan milk
    • 150 g vegan cheese
    • Lettuce
    • Corn
    • Avocado
    • Fresh coriander
    • Salt & pepper to taste
    • Oil for cooking
  • Cooking instructions. Step by step
    • Preheat the oven at 180 degrees Celsius
    • Drape the small tortillas over the oven rack and bake them for about 10 minutes until golden-brown
    • When they are done, take out the oven rack and let them cool down and get nice and crunchy
    • Then, cook the veggies (bell pepper and cubbed zucchini) in some olive oil
    • Cut the smoked tofu into cubes and cook it until golden brown
    • Next step – prepare the vegan cheese sauce: in a pot, mix the vegan milk and the vegan cheese until you get a creamy texture and finish by seasoning it with a little bit of pepper
    • To assemble the tacos, put a layer of shredded lettuce on the bottom of the tortilla shell, continue with the cooked veggies, then the smoked tofu
    • Add some corn, avocado, vegan cheese sauce and finish with a few fresh coriander leaves.
