Vegan Stir Fry with Tofu

Are you in the mood for a really quick, easy and delicious meal? Here’s an idea: Vegan Stir Fry with Tofu. Have it all in one simple dish: vitamins and nutrients from plenty of vegetables plus protein from tofu plus crunchiness from peanuts & panko equals happy taste buds!

INGREDIENTS:

🌱1 cup basmati rice

🌱2 cups water

🌱1 medium onion

🌱1 celery stick

🌱1 bell pepper

🌱1 carrot

🌱1 bunch of asian mushrooms

🌱A handful of snow peas

🌱300 g firm salted tofu

🌱2 tbsp peanut butter

🌱40 ml soy sauce

🌱3 Tbsp flour

🌱150 g panko

🌱100 ml vegetable milk

🌱Vegetable oil

🌱Salt & pepper to taste

To prepare the stir fry:

  1. 1 cup of basmati rice with 2 cups of water. Add 1 tsp of salt and boil for 10-12 minutes
  2. In a wok, add 5 Tbsp of vegetable oil, add the sliced onion, carrot, bell pepper, celery. Mix well then add the mushrooms and the snow peas. Cook for 2-3 minutes, then add the peanut butter, the soy sauce and splash some water to thin the sauce.
  3. Add the cooked rice and mix well

To prepare the fried tofu:

  1. Mix the flour with the vegetable milk until you get a thick paste. Add salt & pepper to taste
  2. Cut the firm tofu into slices (2 cm thick).  Dip each slice into the mix then coat it with panko
  3. Deep fry them for 2-3 minutes on each side, until golden brown

To serve:

🌱For a nice flavour & texture, add some fresh coriander and crunchy peanuts.
