Vegan Spinach Rolls

Time is precious, isn’t it? But so is what you eat. This is why we came out with a delicious recipe that saves your time during the day, but also tastes amazing. It takes just 10 minutes to prepare these vegan spinach rolls, then you simply put them in the oven and enjoy a glass of wine while waiting for them to get nice and crispy.

  • Ingredients
    • 500 g spinach
    • 1 fennel
    • 2 garlic cloves
    • 1 puff pastry sheet
    • 3 Tbsp olive oil
    • 200 g vegan cheese
    • salt & pepper to taste
  • Cooking instructions. Step by step
    • In a pan, heat up some olive oil, then cook the fennel and the minced garlic for about 3 minutes
    • Then add the spinach and cook it until wilted (make sure you wash the spinach thoroughly beforehand)
    • Season with salt and pepper, and let the mixture cook until the water evaporates
    • Lay a puff pastry sheet and spread the spinach mixture evenly on it
    • Sprinkle a thick layer of vegan cheese on top
    • Roll it gently, then seal the edges and cut it into equally-sized rolls
    • Place a parchment paper on the oven tray, transfer the rolls into the tray and sprinkle them with olive oil
    • Bake them in the oven for 30 minutes at 200 degrees Celsius and you’re done
