Vegan Pulled Pork Sandwich

This plant-based pulled pork dish is out of this world. Jackfruit is the star of this recipe and you will be amazed how meat-like this miracle fruit actually is. When cooked, it easily shreds and gets a stringy texture, just like the one of pulled pork. Combined with some creamy vegan cheese sauce and some fresh & crunchy coleslaw, it is simply divine!

  • Ingredients
  • For the Vegan Pulled Pork:

    • 500 g canned Jackfruit
    • 200 g canned chickpeas
    • 5 Tbsp olive oil
    • 1 tsp oregano
    • 1 tsp garlic powder
    • 1 tsp smoked paprika
    • 1 tsp granulated onion
    • 1 tsp cayenne pepper
    • 1 tsp coriander
    • 2 Tbsp tomato sauce

    For the Vegan Cheese Sauce:

    • 200 g vegan cheddar
    • 2 Tbsp cashew cream

    For the Vegan Coleslaw:

    • 1/2 medium red cabbage
    • 2 Tbsp vegan mayo
    • Pepper to taste
  • Plating suggestions
    • Between 2 slices of focaccia (you can also use a bread bun for your sandwich) place a consistent layer of vegan pulled pork, pour some of the delicious vegan cheese sauce on top and lay some vegan coleslaw to finish.

  • Cooking instructions. Step by step
  • To prepare the Vegan Pulled Pork:

    • rain the canned chickpeas then, in a pan, cook them with 2 Tbsp of olive oil for 3-4 minutes.
    • Season with smoked paprika and set them aside on a bowl.
    • In the same pan, add 2 Tbsp of olive oil and cook the canned jackfruit until it softens and starts to get the stringy texture similar to pulled pork.
    • Then, shred it with a fork and season with all the spices above. Mix well and add the tomato sauce.
    • At the end, add the cooked chickpeas and mix them all together.

    To prepare the Vegan Cheese Sauce:

    • Grate the vegan cheddar then melt it in a pan, alongside 2 Tbsp of cashew cream.
    • In order to get the perfect consistency, you can also add a little bit of water or vegan unsweetened milk in the mix.

    To prepare the Vegan Coleslaw:

    • Grate the red cabbage and then, in a bowl add the vegan mayo and mix really well. Season with pepper to taste and there you have it! Easy peasy!
