Vegan Plum Cake

Autumn is when we reap what we sow. And if you harvested plums and walnuts, you’re in luck because you can easily make this delicious, healthy and wonderful cake, full of this season’s flavours. Here’s how to do it, the vegan way!

INGREDIENTS:

🌱1 cup vegan milk

🌱1/2 cup coconut oil

🌱1/2 cup agave syrup

🌱1 cup oats

🌱1+1/3 cups flour

🌱1/3 cup walnuts

🌱1/4 Tbsp vanilla powder

🌱1 Tbsp baking powder

🌱1/2 Tbsp baking soda

🌱1/2 Tbsp salt

🌱Juice from half a lemon

🌱1 flax egg

🌱300 g. plums

🌱3 Tbsp coconut sugar

How to prepare:

  1. For the dough, add in a mixing bowl the following ingredients:
  • vegan milk
  • coconut oil
  • agave syrup
  • flour
  • minced walnuts
  • flax egg
  • oats
  • vanilla powder
  • salt
  • baking powder
  • baking soda
  • Juice from half a lemon
  1. Mix the composition really well
  2. Cut the plums in half and remove the seeds
  3. Spray your baking tray with coconut oil
  4. Sprinkle some coconut sugar on the tray and spread it evenly on the bottom of the tray
  5. Add the plums, side by side, until you completely covered the bottom of the tray
  6. Pour the dough you mixed earlier over the plums
  7. Bake the cake for 45 minutes at 180 degrees Celsius
  8. When it is done, take it out of the oven an let it cool for a few minutes
  9. Then, flip it upside down, decorate it with some walnuts and your delicious cake is ready to be enjoyed!
