Vegan Penne alla Vodka


This Vegan Penne alla Vodka is the perfect treat for any occasion. 🌱250 g penne

🌱4 cloves of garlic

🌱1 chilli pepper

🌱3 Tbsp olive oil

🌱30 ml vodka

🌱8-10 cherry tomatoes

🌱6 Tbsp tomato sauce

🌱2 Tbsp cashew cream

🌱1/2 tsp dried oregano

🌱Salt& pepper to taste

🌱To serve: fresh parsley and vegan parmesan

How to prepare it:

  1. Boil the pasta in salted water according to the package instructons
  2. In the meantime, prepare the sauce: In a pan, add the olive oil and cook the chopped garlic and the finely chopped chilli pepper
  3. Then, add the cherry tomatoes cut in half, the tomato sauce and, of course, the vodka
  4. Season with salt, dried oregano & pepper
  5. Add the cashew cream
  6. Add 2 cups of the pasta water over the sauce, mix well and let the sauce cook for a few more minutes
  7. Finish with some fresh parsley, mix well and there you have it! An easy, delicious and amazing recipe ready for you to enjoy!
