Vegan Papanasi

When you’re craving something sweet, you can’t go wrong with papana. Here’s a quick recipe for boiled vegan papayas that’s as simple to make as it is tasty. In this vegan formula, I’ve replaced the cottage cheese with vegan ricotta from Rawckers, instead of egg I’ve added applesauce to bind the mixture together nicely and made a delicious coating with breadcrumbs, ground walnut and coconut sugar – mouthwateringly good.

  • Ingredients
    • 100 g applesauce
    • 450 g vegan ricotta (we used Rawckers)
    • 140 g semolina
    • 1 tsp vanilla essence
    • 2 tbsp agave syrup
    • 1 cup breadcrumbs
    • one cup ground walnuts
    • 150 g coconut sugar
    • 5-6 tbsp grape oil

    • In a large bowl, mix the vegan ricotta, applesauce (it’s a great substitute for egg as it binds the mixture together nicely), add the semolina, vanilla essence and agave syrup. (You can also prepare applesauce at home, with an apple and 2 tablespoons of water, in a blender)
    • We mix everything very well, then moisten our hands with a little water and form balls from the composition
    • For the coating: heat the grapeseed oil in a pan, add the breadcrumbs and ground walnuts and stir continuously until the composition starts to get a little colour.
    • Then we turn off the heat and add the coconut sugar!!! Very important: you must turn off the heat before adding the sugar, otherwise it will melt.
    • Finally, we boil the papayas until we notice that they rise to the surface on their own.
    • We take them out and dip them in the nut breadcrumb and sugar mixture and that was it.
