Vegan Miso Soup


If you love Miso soup, we bet you’re also going to love this vegan version. Especially since it’s homemade and takes just an hour to make!

For the stock:

🌱3 cloves of garlic

🌱1 thumb-sized piece of ginger 

🌱3 Tbsp grapes oil

🌱2 L water

🌱5 green onion sticks

🌱5 celery sticks

🌱12-15 shiitake mushrooms

🌱3 algae sheets

🌱2 Tbsp miso paste

How to prepare it:

  1. In a pot, add the grapes oil and cook the garlic and ginger for 2-3 minutes
  2. Then, add the boiling water and the vegetables: green onion, celery and mushrooms
  3. Add the algae and the miso paste, then let the soup boil for about 50 minutes
  4. When it’s done, drain it and add soy sauce, maple syrup and salt to taste

To serve:

🌱2 carrots

🌱10-13 baby broccoli sticks

🌱200 g shimeji mushrooms

🌱200 g enoki mushrooms

🌱300 g smoked tofu

🌱300 g Asian noodles

How to cook them:

  1. Cook the carrots in grapes oil until semi-crispy then set them aside on a plate
  2. Cook the baby broccoli with a little bit of salt for 4-5 minutes then set them aside
  3. Cook the shimeji mushrooms with a little bit of soy sauce then set them aside
  4. Cook the enoki mushrooms with a little bit of soy sauce and maple syrup, then set them aside
  5. Drain the smoked tofu, dry it well, cut it into cubes and cook it until golden brown, then set it aside
  6. Boil the noodles according to the package instructions

🌱To assemble:

Add the noodles first in a bowl, cover them with soup, then add the: mushrooms, carrots, broccoli, tofu cubes, some chopped green onion and some crispy algae.
