Vegan Lettuce Soup

Bring the spring into your kitchen with this delicious vegan lettuce soup: healthy, fresh and surprisingly tasty! Plus, it is a great way to use lettuce’s outer leaves and ribs, which usually go to waste.

  • Ingredients
    • Lettuce (2-3 heads, depending on their size)
    • 3 bunches of green onion
    • 1 bunch of green garlic (spring garlic)
    • 5 Tbsp olive oil
    • 2 Tbsp vegetable powder
    • 2.8 L of boiling water
    • 2 cloves of garlic
    • 7 Tbsp cashew cream
    • 4 Tbsp apple cider vinegar
    • Salt & pepper to taste
    • To serve: 300 g smoked tofu
  • Cooking instructions. Step by step
    • In a large soup pot, add some vegetable oil, then cook the chopped green onion and the spring garlic
    • Add the vegetable powder and the boiling water
    • Add the thoroughly washed and chopped lettuce, season with pepper and boil the soup for 15 minutes
    • Turn off the heat and let the soup rest for a few minutes before adding the cashew cream
    • Finish with the apple cider vinegar and 2 cloves of garlic (minced) if you prefer a more intense flavour.
    • Optional: if you want to add some texture and smoky flavour to your soup, you can serve it with some smoked tofu. Dry the smoked tofu with a paper towel really well, then cook it with a little bit of vegetable oil until golden-brown.
