Vegan Gingerbread

Gingerbread is an iconic treat, especially for the Christmas time. And it is also really easy to make, compared to the other traditional Christmassy sweets. This time, we made it vegan and here’s how you can also make your own, just in time for the winter holidays!

  • Ingredients
    • 3 + 1/4 cup flour
    • 2 tsp baking powder
    • 1 Tbsp grated ginger (or ginger powder)
    • 1 Tbsp cinnamon
    • 1/2 tsp ground cloves
    • 1/2 tsp ground nutmeg
    • 3/4 tsp salt
    • 1 tsp vanilla powder
    • 3/4 cup vegan butter (room temperature)
    • 3/4 cup coconut sugar
    • 170 ml maple syrup
  • Cooking instructions. Step by step
    • In a blender, add the butter (room temperature) and coconut sugar, then mix well
    • Add the maple syrup, mix again
    • Add the flour, ginger, cinnamon, cloves, nutmeg, salt and vanilla
    • Mix well one last time and the dough is ready
    • Wrap it in plastic foil and let it chill in the fridge for about 3 hours
    • After this time, roll thin sheets from your dough and cut your cookies into the desired shape
    • Bake them for 8-10 minutes at 180 degrees Celsius
    • When they are done, let them cook for a few minutes and then you can decorate them with some coconut flour (for a healthier approach).
