Vegan Chocolate Cake

If you can’t get enough of chocolate, this amazing cake is for you! This soft cake will simply melt in your mouth and the delicious filling will raise your serotonin levels through the roof.

  • Ingredients
  • Dough:

    • 250 g unsweetened vegan milk
    • 250 g all purpose flour
    • 300 g coconut sugar
    • 70 g cocoa
    • 100 g vegetable oil
    • 160 g apple sauce
    • 230 g boiling water
    • 1 Tbsp vanilla extract
    • 1 tsp salt
    • 2 tsp baking powder
    • 2 tsp baling soda
    • 1 Tbsp apple cider vinegar
    • 1 flax egg

    Filling:

    • 500 g vegan mascarpone
    • 200 g coconut sugar
    • 5 Tbsp cocoa powder
    • 50 ml vegetable milk
  • Plating suggestions
    • Cut the cake into 3 equal slices and add a consistent layer of filling between them and top it with the delicious melted chocolate.
    • Sprinkle some vegan chocolate flakes on top to make your cake extra yummy.
  • Cooking instructions. Step by step
  • To prepare the dough:

    • Set the oven at 180 degrees Celsius
    • In an oven tray place a parchment paper and spray it with coconut oil
    • Prepare your flax egg by adding 1 Tbsp ground flax seed and 3 Tbsp of hot water, the let it rest for 2-3 minutes until it has an eggy texture
    • Into a mixing bowl, add all the ingredients above – except the boiling water (the order doesn’t matter)
    • Mix all the ingredients and at the very end add the boiling water and mix for 1 more minute
    • Place the batter in the oven tray and cook it in the oven for 40 minutes.
    • Transfer it from the tray and let it rest until it’s cool

    To prepare the filling:

    • Add all the ingredients into a mixing bowl and mix until you get a nice, creamy texture

    To prepare the topping:

    • Melt 200 g of raw chocolate with 5-6 Tbsp of vegetable milk.
