  • Ingredients
    • 400 g puffy pastry
    • 300 g fresh asparagus
    • 100 g vegan cheddar
    • 100 g vegan feta cheese
    • 100 g salted firm tofu
    • 1 scallion stick
    • Olive oil, salt & pepper to taste
  • Cooking instructions. Step by step
    • Preheat the oven at 200 degrees Celsius
    • Place a parchment paper on an oven tray
    • Crumble the tofu, grate the vegan cheddar and cut the vegan feta cheese into cubes
    • Finely chop the scallion stick
    • Gently roll the puff pastry to fit the baking sheet on the oven tray
    • Place the vegan cheese mix onto the pastry, 4 cm away from the edges
    • Add the chopped scallion
    • Place the asparagus sticks on top, closely side by side
    • Twist the puff pastry borders inwards and seal them with a fork
    • Spray some olive oil on top and season with some salt & pepper
    • Bake in the oven for 30-35 minutes.
