INGREDIENTS:

🌱400 g puffy pastry

🌱300 g fresh asparagus

🌱100 g vegan cheddar

🌱100 g vegan feta cheese

🌱100 g salted firm tofu

🌱1 scallion stick

🌱Olive oil, salt & pepper to taste

How to prepare it:

  1. Preheat the oven at 200 degrees Celsius
  2. Place a parchment paper on an oven tray
  3. Crumble the tofu, grate the vegan cheddar and cut the vegan feta cheese into cubes
  4. Finely chop the scallion stick
  5. Gently roll the puff pastry to fit the baking sheet on the oven tray
  6. Place the vegan cheese mix onto the pastry, 4 cm away from the edges
  7. Add the chopped scallion
  8. Place the asparagus sticks on top, closely side by side
  9. Twist the puff pastry borders inwards and seal them with a fork
  10. Spray some olive oil on top and season with some salt & pepper
  11. Bake in the oven for 30-35 minutes.
