INGREDIENTS:

For the mint&yogurt sauce:

🌱1 clove of garlic

🌱4-5 mint leaves

🌱100 g vegan yogurt

🌱4 Tbsp olive oil

🌱salt to taste

How to prepare it: add the minced garlic in a small bowl, mix it well with olive oil, then add the salt and chopped mint leaves and mix really good. Add the vegan yogurt and your sauce is done. Put it in the fridge for a few minutes to make it even more refreshing!

For the wrap filling:

🌱1 eggplant

🌱cherry tomatoes

🌱100 g vegan blue cheese

🌱2 tortilla sheets

🌱salt & pepper to taste

🌱olive oil for the cooking

How to prepare and assemble:

  1. Cook the cubbed eggplant in olive oil and season it with salt & pepper to taste, then set aside
  2. Cut the blue cheese into thin strips
  3. Cut half of the tortilla sheet and lay some blue cheese on its second quarter, then fold it
  4. Put some eggplant cubes on the third quarter and fold again
  5. Finally add some cherry tomatoes on the last quarter and fold the tortilla. You should obtain a triangle
  6. In a pan, roast the tortilla wraps on both sides
  7. Serve with the delicious sauce you prepared previously.
