Tofu Scramble (Vegan Scrambled Eggs)

Can you believe there is a dish that looks & tastes exactly like scrambled eggs, but …it’s actually made without eggs? Well, this tofu scramble is the perfect nutritious breakfast that will fill your day with energy.

  • Ingredients
    • 300 g less-salt firm tofu
    • 30 g grated vegan cheddar (or any melty vegan cheese)
    • 1 Tbsp cashew cream (or any plant-based cream you have)
    • 1 scallion stick
    • 1/2 pepper
    • 1 Tbsp nutritional yeast
    • 1/4 tsp curry powder (curcuma is also a really good choice)
    • 1/4 tsp smoked paprika
    • 1/4 tsp garlic powder
    • 3 Tbsp olive oil
    • Pepper to taste
  • Plating suggestions
    • You can serve it with cherry tomatoes & avocado on whole-seed toast bread, or any other side ingredients you prefer.
  • Cooking instructions. Step by step
    • Finely chop the scallion & pepper
    • Scramble the tofu using your fingers
    • In a pan, add the olive oil and then the chopped vegetables and cook them until tender
    • Add the scrambled tofu and season with: garlic powder, curry powder & sweet paprika, then cook well
    • Add the nutritional yeast & the vegan cream. Mix it and you’ll get a scrambled egg-like texture
    • Optional: you can add some grated vegan cheddar for extra flavour
