  • Ingredients
    • 100 g tofu
    • 110 g gluten-free oats
    • 240 ml plant-based milk
    • 1 Tbsp vanilla extract
    • 2 Tbsp maple syrup
    • Coconut oil for cooking
    • For serving: plant-based yogurt, blueberries, maple syrup
  • Cooking instructions. Step by step
    • Combine tofu, oats, plant-based milk, vanilla extract, and maple syrup in a blender.
    • Blend until a smooth and somewhat thick paste is achieved.
    • Grease the pan with coconut oil.
    • Spoon small rounds of the mixture onto the pan to form pancakes.
    • Cook on both sides until they turn golden brown.
    • Serve the pancakes with plant-based yogurt, blueberries (or your preferred fruit), and a drizzle of maple syrup on top.
