Raw Vegan Cucumber Soup


Spoil yourself with a healthy, creamy and refreshing treat! This raw vegan cucumber soup is both the perfect way to start your day with energy and delight yourself with fresh flavours in a beautiful sunny day.

For the soup:

🌱4 small cucumbers

🌱300 ml vegan yogurt

🌱4 Tbsp cashew cream

🌱1/2 spring garlic stick

🌱Salt to taste

How to prepare it: simply put all the ingredients above in a blender and mix until you get a nice and creamy texture

For the sauce:

🌱1 bunch of parsley

🌱7-8 mint leaves

🌱6 Tbsp olive oil

🌱salt to taste

To prepare it, simply blend all these ingredients in a food processor.

To serve: Top your raw vegan cucumber soup with the parsley & mint sauce. For this specific recipe, we also made some toast that goes perfectly with the soup since it is absolutely delicious and crunchy.
