Pasta with Wild Garlic Pesto

For the pesto:

🌱180 g raw cashew

🌱1 bunch of wild garlic

🌱2 Tbsp nutritional yeast

🌱4 Tbsp olive oil

🌱5 Tbsp water

🌱Salt & pepper to taste

For the pasta: 🌱250 g linguine

To serve: 🌱vegan parmesan

How to prepare it:

  1. First, we cooked the raw cashew until golden brown and added it in a food processor
  2. Topped it with the wild garlic, nutritional yeast, salt & pepper and olive oil
  3. Mixed it, added the water and mixed again until we obtained a thick paste
  4. Then, boil the pasta in salted water
  5. In the meantime, pour the pesto in a pan and mix it with 1 cup of the pasta water to dilute it
  6. Mix the linguine with the sauce, then serve your dish with a little bit of vegan parmesan on top
