Pasta With Wild Garlic Pesto

  • Ingredients
    • 250 g linguine
    • 180 g raw cashew
    • 1 bunch of wild garlic
    • 2 Tbsp nutritional yeast
    • 4 Tbsp olive oil
    • 5 Tbsp water
    • Salt & pepper to taste
    • Vegan parmesan
  • Cooking instructions. Step by step
    • First, we cooked the raw cashew until golden brown and added it in a food processor
    • Topped it with the wild garlic, nutritional yeast, salt & pepper and olive oil
    • Mixed it, added the water and mixed again until we obtained a thick paste
    • Then, boil the pasta in salted water
    • In the meantime, pour the pesto in a pan and mix it with 1 cup of the pasta water to dilute it
    • Mix the linguine with the sauce, then serve your dish with a little bit of vegan parmesan on top
