20 minutes Pasta with Lemon and Brussels Sprouts 


Did you use to hate Brussels Sprouts, like the rest of us? Well, we came out with a recipe that will make you change your mind! Here’s the secret on how to cook them so that you’ll enjoy every bite.

🌱400 g Brussels sprouts

🌱300 g smoked tofu

🌱6 Tbsp olive oil

🌱3 cloves of garlic

🌱The zest of a lemon

🌱The juice of half a lemon

🌱300 g linguine pasta

🌱Vegan parmesan for serving

How to prepare the pasta:

  1. Cut the smoked tofu into small cubes and cook them in 1 Tbsp of olive oil until golden-brown. Set aside.
  2. Cut each of the Brussels sprouts in half
  3. Boil the linguine pasta in salty water according to the package instructions
  4. In a pan, add 3-4 Tbsp of olive oil and cook the Brussels sprouts on medium-high heat for 3-4 minutes. 💡Tip: don’t overcook the sprouts. They have to remain raw on the inside to be tasty
  5. Season with salt and pepper
  6. Add the chopped garlic, the lemon zest and the lemon juice
  7. Add 100 ml of pasta water on top
  8. Mix well and cook the sauce for about 1 minute
  9. Then, add the pasta and mix everything together
  10. At the end, add a little bit more olive oil to make the pasta glossy
  11. Season with some extra pepper
  12. Add the smoked tofu and serve with vegan parmesan on top.
