High-Protein Broccoli Salad

If this salad was a superhero, it would definitely be Flash. Super fast and super healthy. Healthy carbs, healthy fat & plenty of protein from broccoli, cashew and lentils pasta – you will find them all in a spectacular salad like no other.

INGREDIENTS:

🌱1 large broccoli

🌱250 g lentils pasta

🌱200 g canned corn

🌱70 g raw cashew 

🌱100 g unsweetened vegan yogurt

🌱Salt & pepper

To serve: scallions

INSTRUCTIONS:

  1. Break the broccoli into florets and cook them in a steamer pot
  2. Cook the pasta according to the package label
  3. To prepare the cashew cream
  4. Prepare the cashew cream: in a blender, add the raw cashew and water to cover it. Blend it until smooth.💡 If you don’t own a professional blender, soak the cashew for four hours or boil it for 10 minutes. Then remove the excess water and add fresh water for blending

To serve:

Mix the steamed broccoli with pasta, canned corn, cashew cream, unsweetened vegan yogurt. Season with salt & pepper. Serve with chopped scallions for some extra crunch.
