    • 500 g cauliflower
    • 600 g king oyster mushrooms
    • 1 tbsp chipotle
    • 3 tbsp cashew cream
    • 2 tbsp olive oil (for sautéing the mushrooms)
    • Fresh parsley for serving

    • Boil the cubed potatoes and cauliflower florets in salted water.
    • In the meantime, tear the king oyster mushrooms by hand into long strips.
    • Transfer the mushrooms to a pan drizzled with olive oil.
    • Season them with chipotle.
    • Mix well, cover the pan with a lid, and let the mushrooms cook over medium heat for a few minutes.
    • Then, remove the lid and brown the mushrooms over high heat until golden brown.
    • When the potatoes and cauliflower are boiled, strain the water and add the vegetables to a food processor.
    • Add the cashew cream and mix until you obtain a smooth puree.
