How to make kids eat their veggies? Well, you hide them into cute little dishes. One of the things kids can’t stand is broccoli. Luckily, we found a way to cook it so that the little ones will enjoy and savour it: crunchy and yummy broccoli tots. Here’s how you can make them at home!

Bake time: 40 minutes

INGREDIENTS:

🌱1 broccoli

🌱2 boiled potatoes

🌱4 Tbsp olive oil

🌱1 Tbsp granulated onion

🌱1 tsp garlic powder

🌱3 Tbsp nutritional yeast

🌱3 Tbsp plant-based unsweetened yogurt

🌱8 Tbsp panko

🌱Salt & pepper to taste

How to prepare:

  1. Wash the broccoli really good then grate it (stem included)
  2. Transfer the grated broccoli into a large mixing bowl and top it with:
  • the boiled potatoes (mash them) – they will replace the egg and help the composition bind nicely
  • olive oil, salt, pepper, garlic powder and granulated onion
  • nutritional yeast (for its cheesy flavour and B12 vitamins)
  • plant-based unsweetened yogurt
  • panko (broccoli will become a little watery while in the oven and the panko will help the tots get a nice crunchy finish)
  1. Mix all these ingredients well, then shape the cute little tots
  2. Place them on an oven tray over a parchment paper
  3. Spray them with some olive oil
  4. Bake for 40 minutes at 200 degrees Celsius
  5. That’s it! 🙂 The kids will absolutely love these healthy wonders.
