Baked Zucchini Sticks

A lot of people love zucchini, mostly because it tastes great and it is very versatile. But have you ever prepared baked zucchini sticks? Crunchy, tasty, healthy and truly easy to make. Give them a shot, you won’t regret it!

  • Ingredients
  • For the zucchini sticks:

    • 3 zucchinis
    • 10 Tbsp corn flour
    • 1/2 tsp garlic powder
    • 1/2 tsp pepper
    • 1/2 tsp dried oregano
    • 1/2 tsp granulated onion
    • 1/2 tsp paprika
    • Salt to taste
    • Lemon zest for a final touch

    Here’s a garlic sauce that goes perfectly with this dish:

    • 2 tsp fresh parsley
    • 2 Tbsp olive oil
    • 2 cloves of garlic
    • 2 Tbsp vegan yogurt
    • 1 Tbsp cashew cream
    • Salt to taste
  • Cooking instructions. Step by step
  • To prepare the zucchini sticks:

    • Cut each zucchini in half and scoop the pulp
    • Cut each half into thin strips and spray them with olive oil
    • Next, prepare the spices mix: corn flour, garlic powder, oregano, paprika, granulated onion, salt and pepper
    • Coat each stick with the spices mix and lay them on an over tray, over a parchment paper
    • Bake for 40 minutes at 200 degrees Celsius
    • For some extra flavour, add some lemon zest on top of the zucchini sticks (after getting them out of the oven).

    To prepare the garlic sauce:

    • Finely chop the parsley and mix it really good with olive oil and salt to taste
    • In a separate bowl, mix the garlic paste with the vegan yogurt, cashew cream and a pinch of salt
    • Add the parsley sauce on top of the garlic sauce for a more aesthetically pleasing look. All done!
