Baked New Potatoes With Tabbouleh

Healthy and completely vegan, these baked new potatoes are topped with fresh, colourful ingredients for a delicious and satisfying meal.

  • Ingredients
    • 1 kg new potatoes
    • 1 big bunch of parsley
    • 2 tomatoes
    • 5 Tbsp olive oil
    • 50 g almonds
    • 1 green onion stick
    • Salt & pepper to taste

  • Cooking instructions. Step by step
    • Lay the new potatoes on an oven tray (you can cut the bigger ones in 2 or 4 pieces), season them with salt and spray them with sole olive oil
    • Bake them in the oven at 220 degrees Celsius for 30-35 minutes
    • In the meantime, roast the chopped almonds in a pan and set them aside, you are going to need them later
    • Finely chop the tomatoes and let them drain in a strainer
    • When the potatoes are ready, transfer them in a big bowl and top them with the fresh parsley (finely chopped), the drained tomatoes, the green onion, olive oil, salt & pepper to taste and the roasted almonds
    • Mix well and enjoy with your loved ones!
