Baked New Potatoes with Tabbouleh


Healthy and completely vegan, these baked new potatoes are topped with fresh, colourful ingredients for a delicious and satisfying meal.

🌱1 kg new potatoes

🌱1 big bunch of parsley

🌱2 tomatoes

🌱5 Tbsp olive oil

🌱50 g almonds

🌱1 green onion stick

🌱Salt & pepper to taste

How to prepare them:

  1. Lay the new potatoes on an oven tray (you can cut the bigger ones in 2 or 4 pieces), season them with salt and spray them with sole olive oil
  2. Bake them in the oven at 220 degrees Celsius for 30-35 minutes 
  3. In the meantime, roast the chopped almonds in a pan and set them aside, you are going to need them later
  4. Finely chop the tomatoes and let them drain in a strainer
  5. When the potatoes are ready, transfer them in a big bowl and top them with the fresh parsley (finely chopped), the drained tomatoes, the green onion, olive oil, salt & pepper to taste and the roasted almonds
  6. Mix well and enjoy with your loved ones!
