20 Minutes Pasta With Lemon And Brussels Sprouts

Did you use to hate Brussels Sprouts, like the rest of us? Well, we came out with a recipe that will make you change your mind! Here’s the secret on how to cook them so that you’ll enjoy every bite.

  • Ingredients
    • 400 g Brussels sprouts
    • 300 g smoked tofu
    • 6 Tbsp olive oil
    • 3 cloves of garlic
    • The zest of a lemon
    • The juice of half a lemon
    • 300 g linguine pasta
    • Vegan parmesan for serving
  • Plating suggestions
    • Season with some extra pepper
    • Add the smoked tofu and serve with vegan parmesan on top.
  • Cooking instructions. Step by step
    • Cut the smoked tofu into small cubes and cook them in 1 Tbsp of olive oil until golden-brown. Set aside.
    • Cut each of the Brussels sprouts in half
    • In a pan, add 3-4 Tbsp of olive oil and cook the Brussels sprouts on medium-high heat for 3-4 minutes
    • Don’t overcook the sprouts. They have to remain raw on the inside to be tasty
    • Season with salt and pepper
    • Add the chopped garlic, the lemon zest and the lemon juice
    • Add 100 ml of pasta water on top
    • Mix well and cook the sauce for about 1 minute
    • Then, add the pasta and mix everything together
    • At the end, add a little bit more olive oil to make the pasta glossy
